Standardization of different levels of lactose hydrolysis in the preparation of lactose hydrolyzed yoghurt
Yoghurt is a unique fermented dairy product, consumed throughout the world and the trend ofconsumption is increasing due to its unique health benefits. Yoghurt mix is often supplemented with MSNF(milk solids-non-fat), it may contain as much as 5.7% unhydrolysed lactose. Lactose can be hydrolysed withan enzyme lactase. Deficiency of lactase in lactose-intolerant persons leads to gastrointestinal...
متن کاملElectrical assessment of functional lactase activity in conscious man.
Using an electrical technique for measuring transjejunal potential differences (PDs) in conscious man, we have estimated the electrogenic absorption of the hexoses liberated by hydrolysis of lactose which was infused into the jejunum of one normal control and 21 patients with diarrhoea. The results were compared with jejunal lactase levels determined from biopsy specimens taken from the recordi...
متن کاملNovel formulation of neutral lactase improves digestion of dairy products in case of lactose intolerance
Background Lactose intolerance is the insufficient ability to digest lactose, a sugar commonly found in dairy products. It is caused by a deficiency of the enzyme lactase, which is resident in the small intestine. Lactase breaks down lactose into glucose and galactose, which are readily absorbed into the bloodstream. Lactase deficiency develops slowly over time, most persons concerned do not ex...
متن کاملGenetics of lactase persistence and lactose intolerance.
The enzyme lactase that is located in the villus enterocytes of the small intestine is responsible for digestion of lactose in milk. Lactase activity is high and vital during infancy, but in most mammals, including most humans, lactase activity declines after the weaning phase. In other healthy humans, lactase activity persists at a high level throughout adult life, enabling them to digest lact...
متن کاملLactose digestion from yogurt: mechanism and relevance.
Yogurt is traditionally consumed throughout the world among populations who are seemingly unable to digest lactose. This review provides a historical overview of the studies that show lactose digestion and tolerance from yogurt by lactose-intolerant people. The lactose in yogurt is digested more efficiently than other dairy sources of lactose because the bacteria inherent in yogurt assist with ...
متن کاملRegulation of newly evolved enzymes. I. Selection of a novel lactase regulated by lactose in Escherichia coli.
Thirty-four lactose-utilizing strains of E. coli were selected from a lac Z deletion strain. In 31 of these, the synthesis of the newly evolved lactase is regulated by lactose. The lactase activity in all the strains is indistinguishable from the ebg(+) activity identified by Campbell, Lengyel and Langridge (1973).
